Delicious Ginger Bread & Lemon Sponge Pie



Yes, this ginger bread is, in fact, delicious. I know, because I made it today. 


Delicious Ginger bread
2 beaten eggs 
1 cup sugar
½ cup molasses
½ cup shortening
1 teaspoon cinnamon
½ teaspoon ginger
2 cups of flour, sifted
2 level teaspoons baking soda, sifted with the flour
1 cup boiling water


Mix ingredients in the order given. Bake about 20 minutes.





I think baking at 325 for about 30 or so minutes. I tried it at 350 at first and it looked like it was browning too quickly. I reduced the heat to 325 and kept checking on it in 5-10 minute increments. I'm not sure how long it'd ultimately take at 325, but that's where I'd start the oven at next time I make this.

1 tablespoon butter, melted
1 cup sugar
4 tablespoons flour
2 egg whites well beaten, until soft peaks form
2 ½ tablespoons of lemon juice
1 cup of the milk
