Upside Down Cake
1 ¼ cups flour
1 ¼ teaspoon baking powder
4 tablespoon butter or shortening
¾ cup sugar
1 egg, beaten well
½ cup milk
4 tablespoons butter
1 cup brown sugar
1 cup crushed pineapple, acpricots, or peaches
Mix flour, powder, and sugar with butter. Cream until light
and fluffy. Add egg and milk in small amounts at a time. Beat after each
addition until smooth.
Melt 4 tablespoons butter in (oven-proof) iron skillet. Add brown sugar
until melted. Add pineapple (or whatever fruit you are using) and pour batter over mixture. Bake oven at 350 for
30 minutes
