Upside Down Cake

 I'm not entirely sure if this recipe is titled "Upside Down Cake," spelled correctly (as opposed to the previous recipe entry for "Calumet Cup Kakes") or if the title says "Upside Down bake." Either way, it's probably delicious. I love me some upside down cake.




Upside Down Cake

1 ¼ cups flour
1 ¼ teaspoon baking powder
4 tablespoon butter or shortening
¾ cup sugar
1 egg, beaten well
½ cup milk
4 tablespoons butter
1 cup brown sugar
1 cup crushed pineapple, acpricots, or peaches

Mix flour, powder, and sugar with butter. Cream until light and fluffy. Add egg and milk in small amounts at a time. Beat after each addition until smooth.

Melt 4 tablespoons butter in (oven-proof) iron skillet. Add brown sugar until melted. Add pineapple (or whatever fruit you are using) and pour batter over mixture. Bake oven at 350 for 30 minutes
